Raw food contains enzymes that are destroyed when the food is cooked. The enzymes contained in raw food aid the digestion and free the body's own enzymes for regulating the metabolism.

Sashimi is a traditional Japanese delicacy of very thinly sliced raw fish and shellfish served with shredded white radish. The main ingredients are raw salmon, tuna, mackerel, squid, and octopus.

Carpaccio is an Italian meat dish of very thinly sliced raw beef seasoned with lemon juice and spices. Carpaccio was invented at Harry's Bar in Venice in 1950.

Tartare is a Russian meat dish of ground raw beef, chopped onions, and egg yolk. Because ground meat spoils in a matter of hours Tartare should be prepared just before serving.

As a general rule only perfectly fresh shellfish, fish, and beef should be consumed raw.

Other types of meat, especially pork and poultry, should never by consumed raw because of the presence of harmful bacteria. Raw milk and eggs are also risky types of raw food.

Raw fruit and vegetables are part of almost anyone's diet.

Fruit contains lots of vitamins and dietary fiber and is best consumed raw.

To increase the share of raw food in your diet have as many apples, pears, grapes, melons, oranges, bananas, kiwis, strawberries, and other raw fruit as you wish.

Freshly squeezed fruit juice should also be part of your daily raw food intake.

A crispy vegetable salad of mixed greens, tomatoes, cucumber, spring onion, and other raw vegetables is a wonderful complement to a meal of raw fish or meat.

Raw fruit and vegetables should always be washed thorougly before consumption to remove dirt and pesticides.
